What size should I grind my coffee?

That all depends on how you are brewing your coffee. In general, if you are tasting bitter coffee then your grind size is to fine. If your coffee seems to be flat, watered down, or not packing the punch that you like, your grind size is to coarse and it should be adjusted downward. For automated drip coffee, think about the size of sugar grains and try to grind near that, maybe slighlty larger. Lighter coffee should be ground finer than medium/dark coffee. As always, grind size is something that you will need to adjust to your equipment and tastes. If your coffee taste a little off, always start with your grind size.

What temperature should my water be?

This is a pretty important factor in your brewing. In general, your brewing water temp should be between 195 F and 205 F. I typically brew between 200 F and 205 F. This is what works for me. This seems to offer the right amount of extraction when combinded with the correct grind size. I always recommend an electric temperature controlled kettle. If you are using an automated drip machine, try preheating your water in the microwave for a minute or two and you will be surprised at the results!
